The chayote is a very typical vegetable of Amèrica Llatina, of green color, rough and prickly crust, contains abundant water.

This salad is very simple and of a delicious flavour. I took advantage of founding this delicious vegetable (similar to the potato), in the shop of Latin Americans products in Vía Laietana (Barcelona), since I had not seen it here in five years. This was one of my favourite salads, and my mother prepared it frequently when of girl I arrived of the school.
2 medium chayotes
Ingredients for the Mayonnaise:
1/4 liter of soft olive oil
Beating the egg with the robot of cooking together with the juice of half a lemon and some salt, adding slowly the oil with a fine thread and continuing beating until it takes the point of mayonnaise.
